Is convection the best toaster oven feature?

A convection toaster oven uses a fan to move heated air around inside the toaster oven. Convection is defined as the transfer of heat into or out of a moving fluid, like air. I'll skip the physics lesson and get right to the benefits of using convection.

First, food cooks more evenly. The air circulating inside the oven reduces hot spots on the food by removing a small layer of air that surrounds the food, which acts as an insulator. Some people say foods have improved texture and flavor when cooked with a convection oven.

Second, convection is more energy efficient than the standard radiant oven. How much more efficient? There is a rule of thumb called the "rule of 25s". When you follow a recipe written for a radiant oven, just lower the temperature by 25 degrees Fahrenheit and cook for the same amount of time. I've personally done this for frozen pizzas and they cook perfectly.

If you've ever reheated fries in the microwave, you know they are nothing like they were when they were fresh. Leftover fried foods, including fries, reheat better in a convection oven than in a microwave. Isn't that amazing? Who knew science could be so tasty?
